Ever made muesli? I know, it’s not a word that inspires good eats, but if you try it, you will love it. Not only is it a great way to have oatmeal and cereal at the same time, it’s also a fun way to personalize your breakfast because you can pretty much add in anything you want to.
My husband likes his muesli sweet and creamy. I like mine nutty with lots of texture, but not too sweet. Norah kinda likes her Daddy’s version.
So what is muesli? It’s just a combination of nuts, grains, dried fruits and seeds. It’s super simple to make. Before you go to bed, just grab a bowl and throw in some rolled oats and whatever add-ins that will make you happy. Dried fruit and chopped nuts are pretty traditional, but I like mine to provide a lot more nutrients so I throw in chia, hemp and some other goodies. Then add some kind of milk. We use our homemade almond milk, but you can really use any milk you want…coconut, rice, soy, or cow’s milk. You can also add yogurt at this point, that’s what makes it creamy. If you like it sweet, you could stir in some honey, agave or maple syrup now, too. Then cover up the bowl and place in the fridge overnight. In the morning, top with some fresh fruit, if you want, and enjoy!
Some of my favorite add-ins are chia seed, sliced almonds, and cocoa nibs. My latest creation had lots of fun stuff in it, and I happened to have some fresh blueberries so I threw them on top. I think you’ll love experimenting with what you have on hand. Let me know how yours turns out!
Chia Almond Muesli with Blueberries
Ingredients
- 1/2 cup rolled Oats I use McCains
- 1 Tbsp chia seed
- 1 Tbsp hemp seed
- 1 tsp Lacuma powder or any sweetener you have
- 1 Tbsp cocoa nibs
- 1/4 cup golden raisins
- 1/4 cup sliced almonds
- 1 1/2 cup unsweetened almond milk
- dash vanilla powder or vanilla extract
- dash cinnamon
- handful blueberries or any fresh fruit
Instructions
- Place all the dry ingredients in a bowl. Add milk and sweetener (if using) and mix until combined well. Place in the refrigerator over night. In morning, add fresh berries, if using.
