This delicious roasted corn chowder is also on the summer rotation. And today I snuck in a little something extra to ramp up the nutrition factor.
I love making veg-heavy soups and stews, but oftentimes if they don’t contain beans or grains I don’t get full and I tend to overeat. This is mostly because these types of blended soups are usually pretty low in fiber.
Recently I was doing a little experimenting in the kitchen with my Pure Encapsulations PureLean® Fiber powder. I always add 2 scoops to my smoothies and I’ve played around with adding a few scoops to waffles and pancake recipes as well.
You know what’s coming next right?
You guessed it! I added fiber powder to the chowder! And it came out pretty amazing. There’s actually some sweetness in the fiber powder from the apple pectin and prune powder that brought out the natural sweetness of the corn, making this chowder super kid-friendly. Norah scarfed down a huge bowl hot from the stove!
Why Fiber Powder?

Incorporating the Pure Encapsulations® fiber powder into this chowder was a no-brainer for me. It’s completely hidden (I promise you can’t taste it!) and makes the end result just a little bit thicker.
This Corn Chowder is creamy, just a little smokey, and chock-full of fresh vegetables, including corn, celery, onions, and carrots. Totally delicious!
Roasted Corn Chowder
Ingredients
- 1 head cauliflower chopped into florets
- 3 Tbsp olive oil (or ghee)
- 1 small onion diced
- 3 cloves garlic minced
- 1/2 cup celery diced
- 1/2 cup carrot chopped or shredded
- 3 cups corn roasted (fresh or frozen)
- 15 oz light coconut milk canned
- 1 cup water (more or less, as needed)
- 1 tbsp sea salt
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp cumin powder
- 1/2 tsp thyme
- 1 tsp oregano
- 6 scoops PureLean Fiber Powder
- 1 tsp liquid smoke optional for more smokey flavor
- fresh parsley, chopped as garnish
Instructions
- Chop the cauliflower into florets and steam until tender. You can do this on the stove or in the microwave.
- Heat olive oil or ghee in a large Dutch oven over medium heat. Add half the steamed cauliflower florets, onion, garlic, carrot and celery. Saute for a few minutes, then add salt, onion and garlic powder, paprika, cumin, thyme and oregano. Cook until veggies are softened, about 10 minutes.
- To a blender, add coconut milk, remaining cauliflower, PureLean Fiber powder, and half the roasted corn. Blend well, adding water as needed to thin mixture.
- Add the cauliflower mixture and remaining corn to chowder pot and bring to a gentle boil.
- Saute until ready to serve, adjust seasoning as needed.
- Garnish with fresh chopped parsley.
