Curry Cabbage & Cauliflower Stir Fry + $700 Amazon Giveaway!

Super simple Indian inspired cabbage stir fry recipe with cauliflower rice and peas. Gluten free, low carb and delicious! I fell in love with curry back in Graduate school. It was the late 90’s and I was living in Harrisonburg, Virginia at the time, when JMU was home to a few cozy vegan eateries. I would wait in line for an hour on Sunday morning for The Little Grill’s buckwheat pancakes and homemade falafel and Friday night often included a run to the Indian-American Cafe for Gobi Aloo. I made that dish for years using my Good Housekeeping cookbook, and the smell of curry still reminds me of that time in my life.

Nowadays I like to put a healthy spin on old favorites. This Curry Cabbage & Cauliflower Stir Fry pays homage to my grad school days and my love of all things curry and turmeric.

This stir fry is super simple to make and includes three awesome veggies in one delicious dish. After a quick saute of the shredded cabbage, I added curry, turmeric and cumin — one of my favorite spice trios. Then I stirred in cauliflower rice and frozen peas, which took this stir fry to a whole new healthy level.

Why is this stir fry as good for you as it is delicious? Well, it contains not one, but two cruciferous veggies (the cabbage and the cauliflower) and these guys are well-known nutrition powerhouses. It also contains turmeric, which I add to everything these days (even a smoothie) and can’t stop writing about. Oh, and don’t forget about peas. These kid-friendly legumes are bursting with nutrition goodness, too.

This Curry Cabbage & Cauliflower Stir Fry is:

Curry Cabbage & Cauliflower Stir Fry

Ingredients

  • 1/2 whole cabbage, shredded (you can use pre-shredded bag, too)
  • 1 cup riced cauliflower (you can use frozen, too)
  • 1 cup frozen peas
  • 1 onion, diced
  • 1 Tbsp coconut oil
  • 1/2 tsp sea salt
  • 1 tsp fresh ginger, minced
  • 1/2 lemon, juiced
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • 1 tsp curry

Instructions

  1. Using a food processor, shred the cabbage and rice the cauliflower. If using frozen riced cauliflower, defrost 1 cup. Heat coconut oil in large saute pan. Add onion plus 1/4 tsp salt and cook until onion softens, about 3 minutes. Add shredded cabbage (you might have to do this in batches). Once all the cabbage is in the saute pan, stir in ginger, spices and remaining salt.Then add peas and cauliflower and mix gently to combine. Top with lemon before serving.

I strive to eat well and feel good about what I eat. That’s one reason I have nutrition strategies, so that I am able to enjoy favorite foods without regret. Since pasta is a favorite food, I’ve got a strategy. I call it “health it up!”

To “health it up” simply means to make a dish more nutrient-dense. I do this by adding greens, healthy fats, herbs and spices, or vegetables to the recipe. It can be as simple as stirring sauteed kale and turmeric into chili or as fancy as adding reishi mushroom extract to my green smoothie. You decide how to health up your own meals!

My “health it up” strategy is not only great for feeling good about what you’re feeding yourself and your family, but also for getting the most nutrition bang out of your food. I love knowing that I’ve upped the nutrition ante a bit by applying this simple strategy to my meals.

I created this creamy and delicious Healthy Linguine Alfredo for the folks over at Dreamfields. I was thrilled to be able to health it up in two different ways. First, I was able to use this high fiber, high protein pasta. I cook a lot with the bean-based pastas and spiralized zucchini but sometimes you just want the real thing! Dreamfields is a line of pasta made with premium durum wheat semolina from North Dakota. The semolina gives it the familiar taste and texture of traditional pasta. This pasta is also quite filling. It has 5 grams of fiber and 7 grams of protein per one cup of cooked pasta!

The creamy sauce for this Healthy Linguine Alfredo is my second healthy addition. It’s a lovely combination of steamed cauliflower and evaporated skim milk, along with some Parmesan cheese and spices for a ton of flavor. It’s the perfect weeknight meal when you’re craving something decadent and creamy! I hope you’ll try it.

Healthy Linguine Alfredo

Prep Time: 20 minutes

Cook Time: 10 minutes

Total Time: 30 minutes

Yield: 4 servings

Healthy Linguine Alfredo

Ingredients

  • 8 oz Dreamfield’s Linguine Pasta
  • 4 cups cauliflower florets (1 small cauliflower)
  • 1 tsp olive oil
  • 1-2 cloves garlic, chopped
  • 1/2 cup evaporated skim milk
  • 1/3 cup Parmesan cheese
  • 1 teaspoon sage leaves, finely chopped
  • 2 Tbsp vegetable broth
  • ¼ tsp nutmeg
  • 1 teaspoon sea salt, or to taste
  • ½ teaspoon pepper, or to taste
  • Fresh sage or parsley, for garnish

Instructions

  1. Heat the olive oil in small saute pan and saute garlic until aromatic. Remove from heat. Place cauliflower florets in a large pot and cover with water. Bring to a low boil. Once boiling, cook for another 3-5 minutes until fork tender. Drain. You can also steam or microwave these in a glass bowl, covered, for 3-4 minutes.
  2. In a high speed blender, add the cooked and drained cauliflower, Parmesan cheese, evaporated milk, sautéed garlic, vegetable broth, nutmeg, salt, and pepper. Blend until very smooth and sauce like, this may take 1-2 minutes. If sauce becomes too thick, add a little more vegetable broth. Taste and adjust seasoning. Set aside.
  3. Bring a large pot of water to a boil. Add pasta and boil for the time instructed on the package. Drain the pasta and put it back into the pot. Turn heat down to low, add the cauliflower sauce to the pot with the pasta and stir in 1-2 more tablespoons Parmesan cheese, if desired. Taste and add more salt, if needed. Serve with a sprinkle of black pepper, fresh sage or parsley.

I am in love with this amazing cookbook! It’s one of those books you read cover to cover because the pictures are so pretty and the food looks so delicious. It’s called Straight from the Earth, Irresistible Vegan Recipes for Everyone and it’s written by Myra Goodman and her daughter, Marea Goodman. You may have heard of Myra…she is  the co-founder of Earthbound Farm. If you choose organic products in the grocery store, you’ve eaten their food. Back in 1986, they were the first company to successfully launch pre-washed, packaged salad for retail sale. And the rest is history, right?

Straight From The Heart Vegan Cookbook

Okay, you might be thinking, vegan?? I’m not a vegan, this book won’t work for me! But don’t you worry about that. The recipes are so versatile and utilize fresh, seasonal veggies that you’ll forget they’re vegan! Think of it more as a great go-to cookbook for interesting and creative plant-based dishes that everyone will love — vegans and meat eaters alike!

I wanted to get my family on board so I went right to a fun recipe from the appetizer section. As I was making it, Norah was watching and said “popcorn salad…interesting” — hence the name.

Yes, there’s baby spinach in there! As odd as it may sound, it’s really tasty — this bowl was gobbled up by the meat-eating husband in less than 10 minutes. The baby spinach in there surprisingly works,  and it’s a one-of-kind appetizer, too! The flavor is a combination of herbs and spices, lemon and nutritional yeast (for a cheesy taste), but you could really make this popcorn your own by using your favorite toppings.  I made it my own way, air popping the corn and using a few different spices —  it came out great.
