Sheet Pan Dinners are Amazing!
I personally love sheet pan dinners. I turn on some music, fire up the oven, prep the ingredients, and load up the sheet pans. So easy and a great way to multi-task (just remember to set a timer so you don’t burn dinner!). All of the recipes here are full of flavorful ingredients like curry and chili pepper, as well as tons of veggies to help you get lots of variety in your diet. As I’ve mentioned in previous posts, getting in plenty of fruits and vegetables is so important for gut health.
The clean-up is so simple too! Use silicone baking sheet liners or parchment paper to line the sheet pan, that way you don’t have to scrub the burned-on bits off of the pans after dinner.
# 1. Veggie Sheet Pan Fajitas
This fun Veggie Fajita recipe from Hello Glow made my list because I LOVE mushrooms. If you’ve been following me at all, you know they are frequently featured in my breakfasts and other meals. They are full of phytonutrients and nutritional mushrooms have so many amazing purposes. This recipe also features butternut squash and colored peppers for a nice dose of vitamin A and C. The spice rub is super easy to throw together and there’s even a fun cashew crema that you can make and drizzle on. (If you don’t feel up to this extra step, you could always leave it off.)
#2. Roasted Vegetable Masala
If you enjoy Indian food you’ll want to give this Roasted Vegetable Masala recipe from Low Carb Maven a try. The tomato and spice rub is reminiscent of Aloo Gobi. (A cauliflower curry dish common in many Indian restaurants.) The veggies come out caramelized and flavorful and the house smells AMAZING! This rub would be fantastic on just about anything, so don’t limit it to this recipe. Give it a try on other veggies too. If you don’t have Masala, you can sub in curry powder, but the flavor will be different.
#3. Vegan Dijon Rosemary Sheet Pan Dinner
This recipe from Rabbit and Wolves for Vegan Dijon Rosemary Sheet Pan Dinner is simple and easy to throw together on a busy weeknight. Broccoli is full of nutrients and potatoes add potassium. Tofu rounds out the meal nicely. It’s a great source of protein and all nine essential amino acids. Plus, everything comes out super flavorful with the lemon, rosemary, and dijon seasoning.
#4. Southwest Sheet Pan Dinner
This Southwest Sheet Pan Dinner from Dietitian Debbie is chock full of veggies like sweet potatoes, zucchini, red pepper, cucumber, and avocado. I love the addition of black beans for protein and fiber. It’s super easy to put together and have dinner ready in an hour. #5. Mediterranean Sheet Pan Meal
This Mediterranean Sheet Pan Meal from Vegan Yack Attack is full of so many vibrant and colorful vegetables that it just jumps off of the page. You can customize it however you like and add chickpeas and quinoa if you want to add more protein and fiber to the meal. Plus, it has an herbed tahini dressing which adds a nice creamy herby element and you KNOW I love using herbs in cooking.
#6. Za’atar Spiced Veggie Sheet Pan Dinner
I’m not going to lie. One of the reasons that I picked this Za’atar Spiced Veggie Sheet Pan Dinner from Oh My Veggies is the use of Za’atar spice mix. I love getting a chance to use different spices and herbs and this adds a unique flavor. Za’atar spice is generally a mix of dried oregano, thyme, and/or marjoram, sumac, and toasted sesame seeds. The other reason is that I loved the colorful mix of vegetables. It’s so beautiful AND nutrient dense.
#7. Vegetarian Shawarma Sheet-Pan Dinner
This Vegetarian Shawarma by Kitchen Skip is such a fun way to dress up vegetables. The marinade is super simple to make and gives the vegetables a unique flavor. You can turn this into pita sandwiches with one of the suggested drizzles or create a grain bowl with one of your favorite whole grains. Top with some fresh herbs, shredded red cabbage. Then add in some chickpeas or hummus, and you have a flavorful, fun, and nutrient-dense meal.
#8. Vegan Tofu Sheet Pan Dinner with Pesto
This Vegan Tofu Sheet Pan Dinner with Pesto created by Munch Meals by Janet is gorgeous and simple to make. If you’re looking for a dinner that looks a little fancy, this is a great dish. I love all the spices and the pesto is delicious. This would be especially great in the summer when basil is fresh from the garden!
#9. Sheet Pan Burritos with Cashew Queso
You can’t have too many burrito or taco recipes, right? This Sheet Pan Burrito Recipe from American Home Cook has a creamy cashew queso spread (recipe here) that is so good! This will definitely be a fun addition to your next taco night.
#10. Greek Vegetables with Feta
This Greek Vegetables with Feta Sheet Pan Dinner by Cotter Crunch is unique. You don’t often see slices of feta cheese on a sheet pan meal, but wow, it is so good! Feta Cheese is low in fat and has high amounts of B vitamins, phosphorous, and calcium compared to other cheeses.
#11. Fall Harvest Sheet Pan Meal With Rosemary & Lemon Garlic Tahini Sauce
I love easy meals and this one is pretty simple. Butternut squash is an excellent source of vitamin A. When you add Brussels sprouts which are high in fiber, vitamins, minerals, and antioxidants you have a nutrient-dense meal with just a few main ingredients. Tahini sauce adds some heary healthy fats, too!
#12. Roasted Fall Vegetables and Savory Tempeh
Cozy Peach Kitchen created this fabulous Roasted Fall Vegetable and Savory Tempeh – Sheet Pan Dinner. It’s chock full of fantastic fall and winter veggies, plus a marinated tempeh. Tempeh is such a great source of protein and it’s a probiotic food that is great for gut health! There are so many great flavors in this recipe. I know it will be a favorite in your house!
#13. Simple Sheet Pan Ratatouille
This Simple Sheet Pan Ratatouille by Smart in the Kitchen is super simple and easy to throw together. The best part is, you can use the leftovers with pasta or polenta or on top of a salad. The fresh basil adds an element of freshness that is definitely welcome in the wintertime! Chickpeas add protein and fiber as well.
#14. Sheet Pan Sweet Potatoes and Black Bean Hash
The Kitchn created this Sheet Pan Sweet Potatoes and Black Bean Hash. It’s so colorful I almost want to frame it! It’s perfect for breakfast for dinner (or a Sunday brunch.) There are so many immune-boosting ingredients in this dish and I love the fresh cilantro and garlic!
#15. Sheet Pan Breakfast Potato Hash & Eggs
While I’m on the breakfast for dinner kick, I couldn’t help but share this Sheet Pan Breakfast Potato Hash & Eggs by Evolving Table. They used regular potatoes and two colors of peppers for a big vitamin C punch. She uses Cajun seasoning, which is not a common spice found in sheet pan meals, or breakfast hash for that matter!
#16. Chipotle Portobello Tacos
Look at the colors in these Chipotle Portobello Tacos by Feasting at Home! Aren’t they gorgeous? The quick-pickled onions are not a part of the recipe, but there is a link to make them. They are definitely worth a few minutes of your time! The Chipotle marinade on the portobello mushrooms is AMAZING! When you combine that with the cilantro crema, these are sure to be a regular addition to taco night.

This Vegan Fajita Bowl with Cauliflower Rice by Feasting at Home subs in cauliflower rice instead of grains, so it’s gluten free and lower in calories. Cauliflower is my favorite veg and full of vitamin C and antioxidants. Plus, it has more of my other favorite, MUSHROOMS!
#18. Sheet Pan Veggie Frittata
Ok, I have one last breakfast for dinner sheet pan meal for you! This one is a Sheet Pan Veggie Frittata from The Kitchn. Yes, you heard it right. A sheet pan frittata! I love this dish because you roast the veggies in the pan, add the egg mixture, topped with cheese, and wait for a fantastic meal. You can also use this to prep six days of eggs at once.
#19. Sheet Pan Cauliflower Nachos
Damn Delicious created this fantastic Sheet Pan Cauliflower Nachos recipe and I’m in LOVE with it. They substituted cauliflower for part of tortilla chips. You still get some crunchy tortilla chips in the mix so you don’t feel cheated, but there are lots of fantastic veggies and beans in this recipe to make it a healthy addition to your dinner rotation. Genius!
